Bagharay baigan
Ingredients
Baigan ( brinjal) 1/2 kg ( cut it from center vertically)
Salt as per taste
Green chillies 6
Red chilli powder 1 tablespoon
Haldi ( turmeric powder) 1 teaspoon
Lehsan paste ( garlic paste) 1 tablespoon
Onion 1 ( large)( chopped, saute and grounded)
Rai ( black mustard seeds) 1/2 teaspoon
Kalonji ( nigella seeds) 1 teaspoon
Methi Dana ( fenugreek seeds) 1 teaspoon
Curry leaves ( curry Patta) 12-14
Oil 1 cup
Garlic cloves ( lehsan k jaway) 2
Bagharay baigan masala - all that we'll make will be used.
imli ka garha paani 1 cup
(Tarmarind with seeds soaked in water and it should be of thick consistency )
Masala for bagharay baigan ( spices required to make dish)
Khashkhash ( poppy seeds) 3 tablespoons
Naryal pissa hua (Shredded dried coconut)3 tablespoons
Til ( sesame seeds) 3 tablespoons
Sabut dhanya ( whole coriander) 1 tablespoon
Zeera (Cumin seeds ) 1 teaspoon
Mongphali ( peanuts) 3 tablespoon
Roast ( bhoonlen) all ingredients on tawa and grind them all .
You can also store this masala (spice)by keeping in refrigerator.
Method for bagharay baigan
Saute chopped onions and grind then put it on side.
Heat oil in a pan and First put 2 garlic cloves , fry it in pan then take it out .In the same oil put brinjal( baigan) and green chillies , fry it then take it out . In same oil, Put grounded chopped onions along with garlic paste . Stir it well then add rai, kalonji, zeera, methi daana and curry Patta into it ..mix it again well enough then add bagharay baigan masala into it with salt ,lal mirch and haldi . stir it well again ( achi tarah bhoonlen) .
Then add fried baigan ( brinjal) and fried hari mirchen ( green chillies) into it and just sprinkle some water on top.let it cook on low flame until it tenders ( gal jaye)
In the end, after its well tendered add imli ka pani ( should be of thick consistency) into it and put it on dum ( steam) for 5 to 6 minutes.
Serve with nan/ roti or rice
