WALDORF SALAD
This recipe is from my book" The Art of Soups, Salads & Sandwiches
Waldorf salad- created at New York's Waldorf-Astoria Hotel in the 1890' by the maître d'hôtel Oscar Tschirky, the Waldorf salad was an instant success. The original version of this salad contained only apples, celery and mayonnaise. Chopped walnuts later became an integral part of the dish. Waldorf salad is usually served on top of a bed of lettuce. I made this recipe as close as to the original 1890's recipe.
Serve Two
Preparation time 15 minutes
INGREDIENTS Weight
• Red apples chunks 300 grams
• Celery diced 50 grams
• Walnuts chopped 50 grams
• Cream & Mayonnaise to bind
• Lemon juice just a dash
• Green grapes; maraschino cherries (optional)
• Apple for garnishing 1 no
• Salt & pepper to taste
• Icing sugar to taste
• Lettuce Leaves/ Fresh herbs
METHOD:
• Stir together the mayonnaise and lemon juice.
• Combine all ingredients together & mix well. Serve ice-cold.
• If desired, serve on lettuce and garnish with green grapes or raisons or maraschino cherries.
